Mexican Chilli Beans
This Mexican inspired meal tickles the tastebuds with our house-made smoky tomato sauce flavoured with freshly ground spices. We combine this with a trio of black beans, kidney beans, and black-eyed peas for some serious amounts of protein. This helps recover those muscles at the end of big adventure days.
We use brown rice in this meal as it is more nutrient-rich than white rice, it contains more fibre, B vitamins, healthy fats and antitoxins. In short, it’s a healthier choice. We also have an abundance of spinach in this meal, which is an extremely nutrient-rich vegetable. It packs high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium. All in all, this is a meal jam-packed with goodness.
This meal also makes for an excellent mountain burrito filling!
We use ‘The Good Oil’ virgin sunflower oil for our cooking, grown right here on the slopes of Otago. Also, the tomatoes we use are grown in New Zealand. By using local produce we support New Zealand growers and reduce food miles and carbon emissions.
