Our rich tomatoey house-made spaghetti bolognese sauce is packed with delicious vegetables of broccoli, carrot and shiitake mushrooms. The ‘meat’ in this hearty dinner comes from TVP – textured vegetable protein – a soy-based ingredient that is high in protein and fibre, and very low in fat. It makes it the perfect recovery food after a long day of adventuring.
Broccoli is loaded with fibre, antioxidants to fight cancer, and vitamin C to aid in iron absorption. While broccoli doesn’t provide as much calcium as a glass of milk, it is still a great vegan source of calcium to help control blood pressure and build strong bones.
We use ‘The Good Oil’ virgin sunflower oil for our cooking, grown right here on the slopes of Otago. Also, the tomatoes we use are grown in New Zealand. By using local produce we support New Zealand growers and reduce food miles and carbon emissions.
